15 Minute Teenager Approved Dinner! And, it actually filled them up! Chicken Caesar Salad Tacos!

Here’s our version of the viral recipe!

Ingredients (for 4 tacos):
1 lb ground chicken
3 tsp salt 🧂
2 tsp each; black pepper, basil, parsley and garlic 🧄 🌿
4 soft taco size flour tortillas
Romaine lettuce 🥬
Parmesan cheese 🧀
Bacon (cooked and crumbled) 🥓
Caesar salad dressing - we use @litehousefoods
1 tbsp Olive oil for pan

Directions:
- Mix ground chicken with salt, pepper, garlic, basil and parsley.
- Spread evenly across tortillas in a flat layer. You can use smaller tortillas and make more tacos if you want.
- heat olive oil in a nonstick pan or on a griddle.
- Add tortillas to pan or griddle, chicken side down and cook for 3-4 minutes. If you have a burger press, place it on top of the tortilla.
- Flip and cook another minute.
- Flip one more time. Transfer to a plate, chicken side up.
- While chicken is cooking, chop lettuce and toss with salad dressing. (Make sure to really wash your lettuce!)
- Top with lettuce, cooked bacon and Parmesan cheese.

Soooo simple and can be on the table in 15 minutes. Chicken Caesar salad always slaps and this one is a hit in our house every time!

We ate allll the tacos this weekend! We hit up @josesstreettacos three times, @venalonzos_tacos on Saturday night and rounded off the weekend by bringing home the Tacos For Four at @palenque.cya! The take home deal was only $45, fed 5 people including two teenagers, and we still had leftovers! Overall it was a successful weekend of tacos and this week, I’ll be looking for more little taco joints around town!

Coconut Lime Dumpling Bake with Baby Bok Choy! 🥬 🥟

One dish, 35 minutes and lots of happy tummies! Everyone went back for seconds. I mixed everything together in the 9x13, laid down some baby bok choy leaves, topped it with the dumplings and then covered it in foil and baked it for 30 minutes.

Ingredients:
1 lb frozen dumplings - we used @sprouts chicken ones
1 can unsweetened coconut milk
3 tbsp red curry paste
½ cup soy sauce
2 tbsp mirin
2 limes, squeezed
1” garlic, minced
4 cloves garlic, minced
1 tsp fish sauce
1 tsp sesame seeds
2 tsp white pepper
Green onions and chili crisp to top

We did a few groceries today… I think we should be stocked for summer… maybe? I got all of this by shopping around in Littleton for about $300. This, and my haul last week will last us through the summer (minus fresh dairy, drinks and produce).
