Sloppy Joes

Sloppy Joes

[wprm-recipe-jump]

Sloppy Joes make a perfect weeknight meal! I love them for busy nights when we have Martial Arts or after-school activities. It’s a great recipe to use up a pound of ground beef as well since you probably have everything you need in the house already.

These Sloppy Joes are so easy to make, and make a great vessel for sneaking in vegetables. To sneak veggies into Sloppy Joes, finely chop ½ onion, ½ green pepper, ½ zucchini and a couple carrots in a food processor. When adding ground beef to pan, add veggies. Cook an extra 2-3 minutes to make sure that the veggies are fully cooked.
